By now y'all know I love to cook. This was a recipe I tried recently that even has my "I don't eat sweet potatoes" husband asking me to make it. Seriously!
I was informed that this recipe will definitely be on our holiday menu's!

Sweet Potato Mash
Prep :: 15 minutes
Cooking :: 20 minutes
Serves :: 4
:: ingredients ::
1lb 8oz sweet potatoes, chopped
3 tablesspoons butter (or if you live in the south, the whole damn stick!)
1 clove garlic, crushed
2 teaspoons grated fresh ginger
1 1/2 tablespoons chopped fresh cilantro leaves
2 teaspoons soy sauce
fresh cilantro sprigs to garnish
:: directions ::
Boil water and add salt and sweet potatoes. Cook until tender (about 15 minutes)
Melt butter in frying pan and add garlic and ginger. Reduce to low and cook for a minute or so.
Mash sweet potatoes (I prefer using the wire hand masher) and add garlic/ginger mix, cilantro and soy sauce.
Put in your favorite bowl and serve hot with a few fresh cilantro springs on top!
Voila!

Thanks Danielle!
ReplyDeleteThe fact that your husband that proclaims "I don't eat sweet potatoes" likes the recipe makes me want to try it for my family as I have at least one of those specimens (NOT the husband though) in my household! I'll share one of my favorite crockpot recipes on my website:
